At Lawry’s, we take carefully marinated beef rib-eye and place it in a specially designed oven for slow roasting. The oven temperature is set at 93°C (200°F), while the internal temperature of the meat is maintained at 48°C (118°F).
As we all know, water boils at 100°C (212°F), while the melting point of beef fat is between 40°C and 48°C (104°F to 118°F). By maintaining an oven temperature of 93°C and an internal meat temperature of 48°C, the fat inside the beef gradually melts without evaporating the juices, resulting in tender, juicy meat with rich flavors. This method ensures that the Prime Rib retains its natural taste, with a balance of richness that isn’t overwhelming.
Traditional beef cooking methods can create temperature gradients within the meat, where the outer layers cook faster than the inside, leading to uneven doneness. With slow roasting, the process takes more time, but the heat distribution is far more controlled and precise.
